Cloudberry glögg

400ml sugar
1 cinnamon stick
10 cloves
¼ tsp cardamom seeds
1 vanilla bean, split
5g fresh ginger, sliced
500g cloudberries
200ml water
700ml white wine

Melt the sugar in a saucepan until it is light brown. Try not to stir it. Add all the spices, cloudberries and water. Simmer 10–15 minutes. Add the wine and let stand until cool. Strain the glögg and add a splash of strong spirits if desired.
